Spring Creek Barbeque

In 1980, Chris and Becky Carroll founded of Spring Creek Barbeque. Soon after, the historic Mexican Inn Cafe restaurants joined the company and in more recent times, new concepts Shady Oak Barbeque and Grill and Casa Rita’s Mexican Grill were added. Becky Carroll helped develop and promote excellence in academics amongst the hundreds of student-employees with Spring Creek’s Academic Grade Bonus Program, “All-Star” Awards and college tuition assistance programs. The Carroll’s passion for education led them to establish The Mayor Elzie D. Odom/Spring Creek Restaurants Scholarship for students attending Tarrant County College.

Impact

The Mayor Elzie D. Odom/Spring Creek Restaurants Scholarship was established by Spring Creek Barbeque to honor the Honorable Elzie D. Odom. Elected as an Arlington City Council member in 1990, Odom continued his civic leadership as mayor from 1997-2003, the city’s first black mayor.
